Serves up to 8 people
6 eggs – for healthier option use 4 whole eggs and 2 egg whites
1 cup milk
2/3 cup half-and-half
1 cup shredded or grated cheese – for a healthier option use swiss or low fat cheese
1 Teaspoon thyme
1 medium onion, chopped and sauteed
1 cup mushrooms, sliced and sauteed
1 cup ham, diced
3/4 cup cooked spinach, drain, pat dry and chop
1) Preheat oven to 425
2) Whisk eggs in a large bowl then add milk and half-and-half.
3) Stir in cheese, herbs and all other ingredients of your choice.
4) Pour mixture into pie crust and bake for 30 minutes.
5) If quiche has a jiggly center, bake for another 10 minutes. If firm, remove from oven and allow to cool slightly before serving.
