3 cups all-purpose flour
3 eggs, beaten
2-4 tablespoons water
1 teaspoon salt
1) In medium bowl or KitchenAid Mixer, combine flour and salt. Then add the slightly beaten eggs, and mix using KitchenAid mixer. Mixture should form a stiff dough. If needed, add 2-4 tablespoons water.
2) On a lightly floured surface, knead dough for approximately 3 to 4 minutes. Let sit for 20 minutes. Roll dough into walnut sized balls and place into pasta extruder attachment to cut to desired shape. OR
Another option is the pasta roller, fettuccine cutter and spaghetti cutter attachments to make the pasta as seen below.
To cook pasta:
Bring a large pot of water to a boil. Add the fresh pasta, and cook for 2 to 3 minutes. Pasta will float to surface when it is fully cooked. Drain and enjoy as desired.
